Chicken and Eggplant Kebabs Recipe
Ingredients:
4 boneless skinless chicken breast halves -- cut in strips
1 eggplant -- cut into 1" chunks
1 onion -- cut into 1" chunks
3/4 cup Italian salad dressing
1 cup spaghetti sauce -- heated
Directions:
Preheat broiler. Thread chicken, eggplant and onion alternately on 8 metal skewers. Baste each kebab with Italian dressing. Broil 7-9 minutes, turning halfway through cooking, or until chicken is no longer pink inside. Transfer kebabs to a serving platter, top with spaghetti sauce and serve immediately.
